This hearty and delicious winter salad from Joy the Baker packs a nutritional punch and puts two of our favorite winter vegetables to great use.

Roasted Cauliflower, Beet and Farro Winter Salad

Partial List of Ingredients:

  • farro
  • beets
  • cauliflower, cut into small chunks
  • coarse sea salt, fresh cracked black pepper, smoky paprika
  • olive oil
  • salad greens, coarsely chopped
  • crumbled feta cheese
For the Vinaigrette
  • olive oil
  • fresh lemon juice
  • chopped fresh parsley
  • honey
  • red wine vinegar
  • salt and pepper to taste
